At the Copenhagen Hospitality College, they have started training the next generation of chefs that master the green transition in food. The new green kitchen education is more popular than thought, and a new batch of students was accepted in January 2025.

The consumer organization TÆNK and nine supermarkets launched a campaign for the “Bean Burrito” in January 2025. The campaign encourages consumers to eat more legumes and combine the call with a recipe for bean burritos.

Green proteins for the farmers of the future

This project aims to create increased interest and sharpened skills among future farmers to produce protein crops for human consumption. This is done via increased teaching in plant-based production and focusing on increasing protein crops in the canteens of the agricultural schools. The project is run by Danish Agricultural Schools, North Sea College and Think Tank Frej.

Continued market development for organic plant products for the UK

Developing the market in the UK for Danish organic, unprocessed plant products. Through dialogue with stakeholders in retail, the food service sector, processing authorities and organizations, the project aims to increase sales and demand. The project is run by Danish Agriculture & Food Council (largest farmer organization in Denmark.)

Plant Powered Sports & Fitness

Project aims to normalize plant-based meals within sports, and to spread plant-based meals and knowledge about plant-based nutrition to sports halls, sports associations, conventions and fitness centers. The project is run by the Vegetarian Society of Denmark.

Effect of Plant-Based Diet on Disease Activity in Patients with Rheumatoid Arthritis

The project will investigate the possible health effect of a 16-week period of plant-based diet for patients with rheumatoid arthritis, a disease that causes pain, swelling, stiffness, and loss of function in joints. The project PLATE is run by Bispebjerg and Frederiksberg University Hospital, Rigshospitalet, Glostrup Hospital.

Helping producers of plant-based foods

A project that assists small and medium-sized producers of plant-based products, to reach full-scale production, through tailored training e.g. development of production, optimization of taste, packaging or testing of the product’s marketability and consumer acceptance. The project PlantGROWTH is run by the Institute of Technology. 

Lupine and soybean – pioneering new plant-based foods in Denmark

The project aims to establish Danish cultivation of lupine and soybeans, for human consumption. The project works to strengthen the entire value chain from cultivation, quality control, through processing to the sale of lupine and soybeans as food. The project is run by SEGES Innovation P/S, Business Academy Aarhus, University of Aarhus, DSV Seed Denmark A/S, Rhizo-mic GmbH, Lê Trang ApS, Lentils for Life ApS, FoodTure ApS (Tæmpeh). 

Danish plant-based organic foods for the food service sector in Germany, Austria and Switzerland

Through training across the value chain the project contributes to increased use of organic plant-based foods in public and private kitchens.The project is run by Organic Denmark and Bio Aus Dänemark.
